Ingredients: 250 g (2 cups) all-purpose flour 160 ml (2/3 cup) warm water 1 tsp sugar 1 tsp salt 1 tsp dry yeast 2 tbsp olive oil 200 g (7 oz) canned crushed tomatoes 250 g (9 oz) fresh mozzarella cheese, sliced Fresh basil leaves Extra virgin olive oil for drizzling Instructions: In a small bowl, dissolve yeast and sugar in warm water. Let sit for 5–10 minutes until foamy. In a large bowl, combine flour and salt. Add the yeast mixture and olive oil, then knead into a smooth dough (about 8–10 minutes). Cover and let rise in a warm place for 1 hour, or until doubled in size. Preheat oven to 250°C (480°F). Place a pizza stone or baking tray inside to heat. Roll out the dough on a floured surface into a thin round. Spread crushed tomatoes evenly over the dough. Arrange mozzarella slices on top. Bake on the hot stone or tray for 7–10 minutes, until the crust is golden and cheese is bubbling. Remove from oven, add fresh basil leaves, and drizzle with olive oil. Slice and serve immediately.
