Vegetable Fried Rice

Ingredients: 3 cups cooked rice (preferably day-old) 2 tbsp vegetable oil 1 onion, finely chopped 2 cloves garlic, minced 1 cup mixed vegetables (carrots, peas, corn, bell peppers) 2 eggs, lightly beaten 3 tbsp soy sauce 1 tbsp sesame oil (optional) 2 green onions, sliced Salt and pepper to taste Instructions: Heat vegetable oil in a large skillet or wok over medium-high heat. Add onion and garlic, sauté until fragrant. Add mixed vegetables and stir-fry for 3–4 minutes until tender. Push vegetables to the side, pour in the beaten eggs, and scramble until cooked. Add the rice, breaking up any clumps, and stir-fry everything together. Pour in soy sauce and sesame oil, mixing well to coat the rice evenly. Season with salt and pepper to taste. Garnish with sliced green onions and serve hot. Tip: For extra flavor, add a dash of chili sauce or a sprinkle of toasted sesame seeds.
