Hearty Beef Stew

Ingredients: 2 tbsp olive oil 1 kg (2 lbs) beef chuck, cut into cubes 1 large onion, chopped 2 carrots, sliced 2 potatoes, diced 2 celery stalks, chopped 3 cloves garlic, minced 2 tbsp tomato paste 1 liter (4 cups) beef broth 1 cup red wine (optional) 2 bay leaves 1 tsp thyme Salt and black pepper to taste Instructions: Heat olive oil in a large pot. Brown the beef cubes on all sides, then remove and set aside. In the same pot, sauté onion, carrots, celery, and garlic until softened. Stir in tomato paste, then return the beef to the pot. Add potatoes, beef broth, wine (if using), bay leaves, thyme, salt, and pepper. Bring to a boil, then reduce heat. Cover and simmer for 1.5–2 hours until beef is tender.
